For salad:½ cup thinly sliced red onions12 to 16 oz mixed green leaf lettuce, baby spinach or other lettuce of your choice2 medium carrots, grated2 tbsp. chopped cilantro1 cup crispy noodles (Asian isle in grocery store)
- In a large bowl, toss all salad ingredients except crispy noodles with dressing and season with salt and pepper to taste.
- Garnished with crispy noodles.
